It's very easy to tailor this casserole however your family likes it. No meat on part, no cheese on part...you get the picture.<BR/><BR/>Tator Tot Breakfast Casserole<BR/><BR/>32 ounces Tator Tots<BR/>1 pound sausage<BR/>6 XL eggs<BR/>8 ounces shredded cheddar cheese<BR/><BR/>Preheat oven to 425 degrees F.<BR/><BR/>Spray a 9"x13" pan with cooking spray. Line the pan with tator tots. I like to make my rows nice and neat--it makes sure there are lots of potatoes in every bite!<BR/><BR/>Bake for 15 minutes. Remove from oven, then reduce heat to 375 degrees F.<BR/><BR/>While the tator tots are baking, cook sausage. Drain and set aside.<BR/><BR/>Whip eggs with a little water. After you remove the tator tots from the oven, pour the eggs over the tator tots. Perhaps not fancy enough for Christmas morning but one you will want to use for your non cheese eater.<BR/>Dutch Babies<BR/>1 Stick butter<BR/>6 eggs<BR/>1 1/2 c. flour<BR/>1 1/2 c. milk<BR/>Melt butter in 9X13 baking dish in oven while preheating to 425*. Beat eggs, flour and milk (in mixer if possible); then pour into melted butter in 9X13 pan. Bake 20 minutes.<BR/>This delicious french toast type of dish comes out of the oven all golden and puffy. Drizzle with pure maple syrup or lemon juice and powdered sugar.
